Maurice Salad

Years ago, Michigan had a large department store chain called Hudson’s. They had a wonderful restaurant inside the stores. On the menu was a salad that Hudson’s was known for, the Maurice Salad. My Mom and I loved that salad. All Hudson stores are now Macys. I believe all stores no longer have restaurants inside except for one in downtown Detroit. The ingredients are a different combination but very good together. Please enjoy a blast from my past. 😃

  
Ingredients;
Salad dressing (make a day ahead or at least an hour prior to serving with salad)
2 teaspoons of white vinegar
Juice of 1/2 lemon
2 teaspoons onion juice (grate onion on your microplane or cheese grater)
1 1/2 teaspoon sugar
1 1/2 teaspoon Dijon mustard
1/4 teaspoon dry mustard
1 cup mayonnaise
2 tablespoons chopped fresh parsley
1 hard boiled egg, finely diced
Kosher salt and course ground pepper to taste
* 1 teaspoon caraway seeds optional

Combine vinegar, lemon and onion juice, Dijon and dry mustard and sugar. Mix well until combined. Whisk in mayonnaise, parsley and egg. Season with salt and pepper and add caraway seeds if you are using them. The original Maurice Salad did not have caraway seeds but I had the salad at another restaurant decades ago and their dressing had caraway seeds and it was a nice addition. This dressing will keep in the fridge for 5 days.

  
Salad:
1 pound of turkey
1 pound of ham
1 pound Swiss cheese
1/2 cup minced sweet pickles
Shred 1 head of iceberg lettuce
Garnish with hard boiled egg slices and 2 green olives. (Optional)

Cut ham, turkey and Swiss cheese in thin julienne strips. Toss meat and cheese with pickles and lightly fold in the dressing. Top this mixture on a bed of shredded lettuce and add
optional garnish. Serve immediately. Makes 4 servings.

  1. I had a Maurice Salad at Macy’s Somerset Collection a couple of weeks ago. The Macy’s stores in the Metro Detroit area still serves the salad at their in-store restaurant &/or cafe. There is no downtown Detroit. store anymore.

  2. A pound of ham a pound of turkey, and a pound of swiss cheese?
    And only one head of lettuce? Have you ever actually made this? I wanna see a picture. This is totally unrealistic.Same ‘recipe’ that’s all over the internet.Shame on you for copy/pasting.

    • Steve, if you would have read my recipe all of the way down to the end, it clearly states 4 servings. I do not cut and paste recipes on my blog, shame on you for accusing me of that. My salad dressing is different from the ones you claim are plastered all over the Internet. I also have pictures posted of the salad I made, again, they are featured with the recipe. I hope it made you feel better by attacking and making false accusations against me. Have a nice day.
