Quiche Me Baby One More Time

When you have an extremely cute quiche pan, you name your recipe after your pan. I love all quiche, especially Quiche Loraine. This quiche is crustless, making it a delicious low carb recipe. Perfect for breakfast, brunch, lunch or dinner. I made this many times for my Mom and my friend Ana. Family and friend approved.

Ingredients:

6 eggs, I used extra large

1 1/2 cup Heavy Cream

1 teaspoon Salt

1 teaspoon Pepper

1/4 teaspoon Nutmeg

1/4- 1/2 cup Onion, I did 1/2 cup

6 strips of Bacon, cooked crisp and crumbled

4-6 ounces Swiss Cheese*, grated

1- 1 1/2 cups Ham, cut into bite size pieces

Preheat oven to 350 degrees. Spray quiche pan with Pam.

In a blender, add eggs, heavy cream, salt, pepper, nutmeg and onion. I put the blender on purify and let it blend and chop the onions until they were incorporated into the smooth liquid. Set aside.

Place 6 strips of broken cooked crisp bacon on the bottom of the quiche pan. Top with Swiss Cheese. Place ham on top of cheese and carefully pour egg mixture in blender over the top of the ham. I placed my quiche pan on top of a cookie sheet just in case. Bake for 45-55 minutes or until custard is set. I covered the top of my quiche midway through the cooking time to prevent excess browning. Let quiche cool for a few minutes before slicing and serving.

*I prefer gruyere cheese in this recipe but I had Swiss in my fridge and used that. Both make excellent flavored quiche.

Bacon Caprese Club Sandwich

I love the flavor of tomatoes, fresh mozzarella and basil together. So I guess it was inevitable I would create a sandwich and incorporate these amazing flavors.

Ingredients:

3 pieces of bread, I prefer toasted

Sliced tomatoes

Fresh mozzarella slices

4 pieces of bacon

Mayonnaise, if desired

Salt and pepper if desired, I added it to my tomato slices

Basil leaves

Avocado slices, if desired

Balsamic glaze, if desired

Toast bread slices. Spread on your mayonnaise if you like. Layer tomato slices, salt and pepper.  Top with basil leaves and avocado slices if you are using them. Place the the second slice of bread of top. Add bacon and sliced mozzarella to the second slice. Top with last slice of bread and cut into fourths, triangle shape (like they do at the restaurants). Drizzle on balsamic glaze if desired. Enjoy!

Breakfast Brunch and Brinner Quiche

I love breakfast any time of the day. Love quiche for breakfast, lunch or dinner with a nice salad and vegetable. I created a quiche with a hash brown crust, to bring the breakfast, brunch or dinner (Brinner) quality to this yummy quiche!  Enjoy!

Baked hash brown crust.

Ingredients:

Hash Browns, I used Simply Potatoes, Southwest variety, plain would be fine too

1/2 cup or more of cheese, I used Colby Jack, use your favorite, grated

1 cup ham, chopped, I just bought about a half a pound of ham from the deli, about a 1/4 inch ham steak

8 ounces ground sausage, I used mild, cooked and drained

5 pieces of bacon, cooked and crumbled

5 eggs, I used extra large

1 cup while milk, half and half is even better, I used milk

1/4  cup onion, chopped, I used 3 green onions

1/2 teaspoon dry mustard

1/2 teaspoon salt

1/2 teaspoon pepper

Chives, chopped optional for garnish

Preheat oven to 350 degrees. Spray a 9 -9 1/2 inch deep dish pie pan with cooking spray.  Press package of hash browns in the pie pan, forming a crust on the sides and the bottom. Spray with cooking spray to help the hash browns brown and stay together. Bake for 15 minutes. Turn on broiler and broil the hash browns to brown and crisp them up. That should take an additional 4 – 6 minutes.

Put in ingredients and bake.

Put grated cheese on top of browned hash browns.   Add meats, ham, bacon, sausage and onion on top of cheese. In a bowl whisk eggs, milk and seasonings together. Pour egg mixture over the meat and cheese. Bake in oven for 40 – 50 minutes or until egg is set and cooked. Enjoy!

Sizzling Chicken Burgers

Looking for a quick and easy meal to put together? I have a delicious sandwich that can be eaten hot or cold. Please try this hot first. You will love it!

Ingredients:
1 Rotisserie Chicken Breast, shredded
1 cup celery, chopped
1 small onion, diced fine
1 cup mayonnaise
1 1/2 cups sharp cheddar cheese, grated
Salt and Pepper to taste
4-6 hamburger buns, I used pretzel

Preheat oven to 350 degrees. Mix of the above ingredients listed above except for the buns. Spread mixture on your favorite buns. Wrap each burger in foil and bake in oven for 15 minutes. These sandwiches are so good. Unbelievable how good they taste warm. If you decide not to eat them warm, you might want to add more mayonnaise. Teams well with my Remarkable Rotini Pasta Salad as seen in the pictures.
