Monica’s Crockpot BBQ Chicken

I recently had the best BBQ Chicken Sliders at my son and Daughter in love’s home. I knew I had to make it and share it in the blog. This makes a perfect dinner, appetizer, tailgate meal, party meal, it’s just perfect and so tasty.

Ingredients:

4 – 6 boneless, skinless chicken breasts, not frozen*

1 18 ounce bottle Sweet Baby Ray’s Original BBQ Sauce

1/2 cup brown sugar

2 Tablespoons vinegar (white)

1 teaspoon red pepper flakes**

1/2 teaspoon garlic powder

Hawaiian Rolls for sliders or your favorite bun for a sandwich

Spray slow cooker with non stick cooking spray. Place chicken in the bottom of the slow cooker. In a separate bowl, combine BBQ sauce, brown sugar, vinegar, pepper flakes and garlic powder. Pour over chicken and cook 4-6 hours. Remove chicken and shred with forks. Place shredded chicken back in the slow cooker and keep warm until ready to serve.

Toppings:

Shredded cheese

Raw or sautéed onions

Pickles (I prefer Wickles)

Fried Jalapeños

Really whatever you like is just perfect.

Pile on the chicken and your favorite toppings and enjoy! This is a perfect crowd meal and everyone can serve themselves and individualize their sandwiches and sliders.

*I used 6 big chicken breasts because I wanted leftovers to share with my family. Granddaughter Willow loved this chicken and my Dad enjoyed it too. If you make 6 chicken breasts, make more BBQ sauce. Increase sauce ingredients by one half or doubling it.

**Red pepper flakes! They do not add heat, just flavor. No one knew I added them. I would never feed baby Willow something spicy. Trust me, add them to the recipe. Now if you want heat, add more!

Copycat Chicken Salad Chick Pimento Cheese

Since moving to Florida in 1978, I have embraced all things southern. Born and raised in Southern California, my Mom was from North Carolina. I would say I am a southerner. 😉 I am a frequent diner at Chicken Salad Chick. One thing I enjoy is their pimento cheese. It’s made a little differently than what you think pimento cheese you have seen before. This one is made with grated cheese that you grate yourself. No package grated cheese. Even the restaurant grates theirs.

Ingredients:

1 8 ounce package of sharp cheddar cheese (I used Cabot’s)

1/2 cup mayonnaise

1 teaspoon of apple cider vinegar

1 teaspoon of Worcestershire Sauce

1/2 teaspoon of pepper, or more to taste

1/2 teaspoon of salt, or more to taste

1/4 teaspoon of garlic powder

1 4 ounce jar of diced pimentos, drained and blotted with paper towels

2 Tablespoons of finely minced onions (can be grated) or more if desired

Grate cheese using the largest holes of a box grater or food processor. Set aside and refrigerate. In a small size mixing bowl make the dressing for the pimento cheese. Combine mayonnaise, apple cider vinegar, Worcestershire Sauce, pepper, salt and garlic powder. Whisk ingredients together to combine. Add drained dice pimentos and onions, stirring to incorporate. Now it’s time to add the cold grated cheese to this mixture. This is delicious as a sandwich, a burger on crackers or just by itself. Enjoy!

***Chicken Salad Chick sells a spicy version of pimento cheese and it would be the same recipe adding chili powder/and or red pepper flakes. You determine the heat.

Monte Cranberry Cristo Sandwich


I love Monte Cristo Sandwiches. I sure don’t see them sold at restaurants anymore. This holiday season, I had turkey, cranberry sauce and ham leftover.  So here is my version using up delicious leftovers. If you do not have items used in this recipe leftover, they are available to purchase all year. You can go to the deli and just buy ham or turkey slices, not a pound of this or that. Cranberry sauce is sold all year.  If you are not a fan of cranberry, you may substitute your favorite jam/jelly. 


Ingredients:

1 egg, beaten

1/4 cup heavy cream

2 slices of your favorite bread, I used my favorite, sourdough, two days old 

2 slices of Swiss Cheese, or more if desired

1 generous slice of turkey

1 generous slice of ham

Powdered sugar, optional 


Cranberry Sauce:

2 Tablespoons of leftover cranberry sauce

1/2 teaspoon vinegar, I used white distilled but use whatever you have on hand

A pinch or more of red pepper flakes, if you want spicy cranberry sauce, optional
Mix together in a separate bowl and set aside. 


Prepare pan with spray or butter. In a bowl, whisk together egg and heavy cream. Set aside. To assemble sandwich, spread cranberry sauce on the inside of the bread. Place a slice of Swiss Cheese on top of the cranberry sauce. Next put on turkey and ham slices and cover with the other bread slice. Dip entire sandwich in the egg mixture covering all side of bread on both sides. Place in pan and brown on both sides. Cut in half and sprinkle powdered sugar on top if desired. Enjoy!

Sizzling Chicken Burgers

Looking for a quick and easy meal to put together? I have a delicious sandwich that can be eaten hot or cold. Please try this hot first. You will love it!

Ingredients:
1 Rotisserie Chicken Breast, shredded
1 cup celery, chopped
1 small onion, diced fine
1 cup mayonnaise
1 1/2 cups sharp cheddar cheese, grated
Salt and Pepper to taste
4-6 hamburger buns, I used pretzel

Preheat oven to 350 degrees. Mix of the above ingredients listed above except for the buns. Spread mixture on your favorite buns. Wrap each burger in foil and bake in oven for 15 minutes. These sandwiches are so good. Unbelievable how good they taste warm. If you decide not to eat them warm, you might want to add more mayonnaise. Teams well with my Remarkable Rotini Pasta Salad as seen in the pictures.
