Pizza Bowl? Yes this is pizza without a crust. I was inspired by my friend Lisa that ordered this at a pizza restaurant in Louisiana. I knew once she sent me a photo that I could create this delicious low carb dish. Thank you Lisa and Happy Birthday!
1/4 cup Pizza sauce, look at the back and use the one with the lowest carbs on the nutrition label, I used Contadina
Pizza toppings of your choice, I used meatballs and onions (I forgot my mushrooms)
Italian Seasoning, optional
Preheat oven to 350 degrees.
In a small bowl/dish, spread 1/4 sauce in the bottom of your bowl. Add your pizza toppings. I had planned on using mushrooms but I forgot to add them. Cover in mozzarella cheese and bake 5-8 minutes or until heated through. Sprinkle on Italian seasoning if desired. Serve with a tossed salad using low carb dressing to round out your meal. This pizza bowl was 6 total carbs. Depending on what you chose for your toppings, it will determine your carbs. For example, red peppers have more carbs than green peppers. Enjoy!
I love Buffalo Chicken anything. This recipe was adapted from a buffalo chicken dip I make. I have been making this pizza for years and I have made it on several different kinds of pizza crust from store bought to homemade, this is one great pizza. It’s my most requested dish from my family and friends. They LOVE it.
1 rotisserie chicken, cooled, skin removed and shredded
1 8 ounce block of cream cheese, room temperature
1 cup of Buffalo Wing Sauce, I used Sweet Baby Rays
3 celery stalks, chopped fine
4 scallions, one more, snip both white and green parts into small pieces (I always use kitchen shears)
2 cups mozzarella cheese, grated or more, I always use skim (I never really measure cheese)
1/2 cup Bleu Cheese crumbles
1 pizza crust, I have made my own and used Boboli, either one is great
Preheat oven to 400 degrees. Before you take the skin off of your chicken and shred the meat, make sure it’s cool or cold or you will burn your fingers. Don’t ask me how I know this information. 😉 I often buy my chickens a day ahead and refrigerate them. In a sauce pan, melt cream cheese into the Buffalo Wing Sauce, stirring it occasionally. Once the cream cheese and wing sauce are incorporated, add the shredded chicken to the sauce. Add celery and combine. Spread the mixture evenly on top of the pizza crust. Cover with scallions and mozzarella cheese. Sprinkle with bleu cheese crumbles and bake for 10 to 15 minutes or until cheese is melted. I have baked this pizza on a pizza stone and on the aluminum pans with holes on the bottom (found at the grocery store where disposable pans are sold). Slice into wedges and enjoy. This is the best Buffalo Chicken Pizza you have ever eaten. Enjoy!

1 8 ounce block of cream cheese, room temperature
1 tsp of Italian Seasoning
1/8 tsp garlic powder
1/8 tsp onion powder
1 cup grated Parmesan Cheese
1 cup grated Mozzarella Cheese
1 jar pizza sauce, small 8 – 12 ounces
Pizza toppings to your liking, onions, mushrooms, peppers, etc, pictured is sliced green onions
Tortilla chips, Fritos or breadsticks for dipping, pictured is Scoops
Using your mixer, blend cream cheese, Italian Seasoning, onion and garlic powders. Spread in the bottom of a microwave safe pie pan.
Mix Parmesan and Mozzarella in a separate bowl. Sprinkle one half of the cheeses on top of the cream cheese mixture. Top with pizza sauce. Sprinkle remaining cheeses on top of pizza sauce. Add your favorite toppings.
Microwave uncovered on high for 3 – 4 minutes or until heated through. Rotate half way through the cooking time if you do not have a turntable in your microwave. Let set for 1 minute in microwave. Serve with breadsticks or tortilla chips. Enjoy!
I think I could eat Caprese Salad everyday. Because I love this salad and having mini pizza crust leftover from grandsons visit, I created my favorite pizza ever!
Mini pizza crust (I used Mama Mia)
3 slices of mozzarella cheese (I bought a few slices at the deli)
1 tomato, sliced thin
Basil leaves (I use a lot because I ❤️it)
Balsamic glaze, can be purchased at grocery store
Preheat oven to 425 degrees. Slice tomato thin, lay slices on paper towels and salt both sides. This will draw some of the liquid out of the tomato slices. Lightly brush pizza crust with Olive or vegetable oil on both sides. Cover entire top of pizza crust with the sliced mozzarella cheese. (I tore cheese to cover the surface) Before putting tomatoes on top of cheese, place a paper towel on top and lightly press to get any excess liquid out. Cover cheese with tomatoes and basil leaves. Sprinkle top of pizza with Parmesan cheese. Bake for 7 – 9 minutes.
Remove from oven and drizzle balsamic glaze or balsamic reduction on top of pizza. Balsamic glaze can be made at home by reducing balsamic vinegar into a syrup or it can be purchased in the grocery store near the vinegar aisle.
Slice pizza and enjoy!
