2 Sausages (I used Al Fresco)
1/2 cup roasted vegetables (I used Trader Joe’s Fire Roasted Peppers and Onions, you can make your own roasted vegetables by grilling or broiling)
3 Tablespoons or more to taste marinara sauce
Parmesan cheese, optional
Cook sausages, I grilled mine. Slice into bite size pieces. Warm up vegetables and marinara sauce. Combine ingredients and garnish with Parmesan cheese if desired. You can serve this over low carb pasta if you wish but it will change the carb count from low carb to medium high carb.
***As far as the carb count goes, the sausages I used were 1 carb each. The toasted vegetables were about 4 carbs. My marinara was on the high side, I didn’t notice it until I read the label. I used tomato basil flavor and used about 3 tablespoons which was approximately 4 carbs. My goal carb count 9 carbs. Not bad. I didn’t count the cheese because I used so little. You will need to read your labels to see what your total carb count is. I currently have 2 boxes of low carb pasta in my pantry but I find the carb count on the high side. I can’t imagine what regular pasta is.
Pizza Bowl? Yes this is pizza without a crust. I was inspired by my friend Lisa that ordered this at a pizza restaurant in Louisiana. I knew once she sent me a photo that I could create this delicious low carb dish. Thank you Lisa and Happy Birthday!
1/4 cup Pizza sauce, look at the back and use the one with the lowest carbs on the nutrition label, I used Contadina
Pizza toppings of your choice, I used meatballs and onions (I forgot my mushrooms)
Italian Seasoning, optional
Preheat oven to 350 degrees.
In a small bowl/dish, spread 1/4 sauce in the bottom of your bowl. Add your pizza toppings. I had planned on using mushrooms but I forgot to add them. Cover in mozzarella cheese and bake 5-8 minutes or until heated through. Sprinkle on Italian seasoning if desired. Serve with a tossed salad using low carb dressing to round out your meal. This pizza bowl was 6 total carbs. Depending on what you chose for your toppings, it will determine your carbs. For example, red peppers have more carbs than green peppers. Enjoy!
When it’s warm, I want salad for meals. Here is a quick and easy salad that you make ahead later in a bowl and toss the next day. Perfect for when you are entertaining and you actually make it ahead of time. I think you will really like this salad I made in the food processor. Easy and delicious. This low carb and delicious. You would never know that a low carb salad could taste this great.
1 head of iceberg lettuce
1 head of cauliflower or several bunches of broccoli, I used broccoli
Small bunch of scallions, white and green snipped
2 10 ounce boxes of frozen peas, or a bag
1 cup grated Parmesan or Italian Blend cheese
1 pound of bacon cooked crisp, drained well and crumbled
I Chopped the lettuce and broccoli in the food processor. Layer the above ingredients in a large salad bowl. Top with dressing and cover tightly. Next day, toss and serve.
1 1/2 cups of mayonnaise
1 dry packet of Italian Seasoning
Add seasoning to mayonnaise and blend well. Put on top of layered salad and refrigerate overnight. Toss salad and serve. Enjoy.
I absolutely love spaghetti squash. This a great recipe that even your pickiest eater would like. This is a low carb enjoyable meal and you will not feel deprived of your favorite food. Make sure you choose a pizza sauce with low/no sugar.
1 Spaghetti Squash, halved and seeds scooped out
1-2 Tablespoons of Pizza Sauce
Pepperoni or your favorite pizza toppings
Cut spaghetti squash in half and scoop out seeds. Place face down in a microwave safe baking dish. Add one inch of water in baking dish and cook in microwave for 10 minutes. Let set until you can comfortably handle squash. Discard water in baking dish. Scrape insides of squash with fork. Add pizza sauce and top with mozzarella cheese. Add your favorite pizza topping, I used pepperoni. Place under broiler antil cheese melts. Sprinkle on oregano if desired. Enjoy!
I love spaghetti squash. You can dress it up like pasta once it’s cooked. There are many ways to prepare this squash. Bake, microwave and even in the pressure cooker. I typically microwave mine but this time I baked it. This recipe is delicious, low carb and can be served as a meal or side dish.
Once you cut open the squash, scoop out the seeds and pulp just like you would do with a pumpkin.
Preheat oven to 375 degrees. In a baking pan, spray or oil bottom of pan. Drizzle olive oil over squash. Salt and pepper prepared squash, I used garlic salt. Place cut side down in your baking dish. Bake for 35 to 40 minutes until done.
Salt and pepper inside of prepared squash. Fill baking dish with one inch of water with squash inside. Microwave on high for 10 minutes.
Olive oil, if baking
Garlic butter, I used Shamy’s
Parmesan Cheese, grated
Salt and Pepper, I used garlic salt and fresh cracked pepper
Once your spaghetti squash is cool enough to handle, scrape the inside of the squash. Spaghetti like strands will begin to form. Continue to scrape the inside until strands are no longer coming from the sides and bottom of your squash. Add garlic butter, salt and fresh ground pepper, and top with Parmesan or your choice of Italian cheese. I did not add amounts for the ingredients because each squash will yield different amounts of squash depending on the size. Use what you prefer as far as butter, salt, pepper and cheese.
I chose to eat my squash on a plate like spaghetti but you can load it back into the empty squash shell if you prefer. This is a delicious low carb meal or side dish. Mangia mangia! Enjoy!
Tired of leftovers? I promise you will want leftovers so you can enjoy this salad. Perfect on a croissant, bread or for you watching your carbs, on lettuce. Chicken can be used in place of turkey and it’s equally delicious.
3 cups leftover turkey, chopped or shredded
1 cup of dry cranberries (Craisens)
4 scallions, green and white parts, snipped into pieces
3 celery stalks, chopped
1 teaspoon fresh chives
1 cup of walnuts chopped, optional
1 lemon, juiced
1/2 cup sour cream
1/2 cup mayonnaise
1 Tablespoon brown sugar
2 Tablespoons of fresh parsley, chopped
1 teaspoon dry dill, I used Pampered Chef Dill Mix Seasoning (regular dry dill works fine)
1 teaspoon dry oregano or Italian seasoning
Salt and pepper to taste
Combine the ingredients in a bowl. Stir to mix. In a separate bowl, add the ingredients for the dressing. Add dressing to the salad ingredients and stir to combine. Serve on a croissant, your favorite bread or bib lettuce. This turkey salad is even better the next day. Enjoy!

I had dinner at my friends house the other night. I never show up empty handed so I made a very tasty casserole to take with me.
3 large heads of cauliflower
2 8 ounce containers of whipped chive and onion creamed cheese
1/2 cup grated Parmesan cheese
2 cups of sour cream
3 cups grated sharp cheddar cheese, divided
2 Tablespoons of butter
2 teaspoons salt*
2 teaspoons pepper*
1/4 cup to 1/2 cups of chicken broth
1 pound of bacon cooked crispy
About 5-6 green onions
Additional chicken broth for steaming if desired
Preheat oven to 350 degrees. Wash cauliflower and steam pieces of cauliflower for about 10 minutes. You want this to be soft enough to mash. Repeat into all cauliflower has been steamed. I steamed mine in the microwave in a microwave steamer using 1/4 cup of broth for each steaming. Water can be used too. You can do it on the stove top if you like. Once cauliflower has been steamed. Place it in a colander and let it rest for 5 minutes. This will redistribute the water and you will be able to remove big pieces of stem. I mostly used the florets and de-stemmed them before mashing.
Cook your bacon crisp. I used thick cut bacon. While bacon is cooking, mash cauliflower with potato masher. In a large bowl, I used my Kitchen Aid mixer. Blend mashed cauliflower with butter, sour cream, and cream cheese. Add salt and pepper. This is when you decide how thick or thin you want the consistency. Add chicken broth to get your desired consistently. Next add 1 cup of sharp cheddar cheese and one half of the bacon mixture. Mix to combine. I used a deep dish 9 1/2 by 11 1/2 heavy duty aluminum pan. Place in pan and top with remaining cheese and bacon. Bake for 30 minutes until hot. Top with scallions.
This recipe serves 10 people easily. You can cut it in half for smaller quantities. *To taste. Enjoy!
