I love fruit salads. I grew up on them in California. I love them in the summer when fresh fruit is so plentiful and in season. This is not your typical fruit salad, the surprise ingredient is listed below. Fruit salads are great desserts and easy to take to a potluck or family gatherings.
3-4 medium sized peaches or 2 cans of sliced peaches 15 oz in its own juice, drained)
2 11 oz cans of mandarin oranges, drained (I bought low sugar)
1 20 oz can of pineapple chunks, drained or fresh pineapple cut into chunks
1 can reduced sugar cherry pie filling (surprise!)
1 cup of fresh blueberries
1 cup of green grapes
1 cup of strawberries, halved or quartered according to size
Pro tip: The day before I make this fruit salad, I wash my fruit and refrigerate all of the canned fruit and pie filling I am using. When you put the salad together, it will be ready to serve immediately.
In a large bowl, combine the peaches, mandarin oranges, pineapple and pie filling. Stir to combine. Add blueberries, grapes and strawberries. Gently stir to combine. Refrigerate 1 hour before serving unless you refrigerated the ingredients before hand. Serve immediately and refrigerate the leftovers. Enjoy!
