Great Grandmother Willits Waffles


I am so excited about presenting my second Food Blogger for November, Mindy Thomas. She is sharing a very special recipe that has been handed down through generations in her family. I love recipes with a family history. These waffles are delicious and are perfect for breakfast or brunch. Thank you Mindy for sharing this special recipe with us.

Ingredients:
1 1/3 cup flour
4 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons sugar
2 eggs separated
1/2 cup butter, melted
1 3/4 cup milk

Whisk dry ingredients together in large mixing bowl.
Separate eggs – place egg whites in small mixing bowl and beat until stiff peaks form, set aside.
Add milk, melted butter and egg yolks to dry ingredients. Mix until batter is smooth, but not over mix. My Mom says if they are mixed too much, the waffles will become tough.
Fold in stiffened egg whites into the batter. Cook in your waffle iron.

My Twins always like chocolate chips and shredded coconut added to the batter after putting it on the waffle iron and after they are cooked, sprinkled with powdered sugar. Or serve with syrup or your favorite fruit. Enjoy!
