This is my version of a restaurant in Tampa Spinach Salad. I could eat this salad every week.
1 bag of baby spinach
1 small jar of marinated quartered artichoke hearts, drained
Feta cheese crumbles (you decide on how much you want to use)
2 diced tomatoes or a box of grape tomatoes
Croutons of your choosing
4-6 ounces of sliced fresh mushrooms (I used baby bellas)
3 hard boiled egg quartered
1 bottle of Wishbone Russian dressing
Toasted buttered Cuban bread, optional
Toss everything in a big bowl except the Cuban bread. I usually add the dressing to individual bowls. This would make 2-3 generous individual bowls of salad. Enjoy.
