A year or so ago I became friends through Facebook with sweet Amy Driskell. I have discovered that sometimes you meet the nicest people on Facebook. Amy is a great gluten free cook. She has a group on Facebook called Gluten Free Gods. It’s a closed group but they share awesome recipes and inform you on new gluten free products. Head on over and ask to join and she will get you in her group. This quiche is right up my alley. No crusts! 👏👏👏
9 eggs, beaten
1 cup heavy cream
2 cups Swiss cheese, grated
1 cup Parmesan cheese, shredded
1 can artichoke hearts, drained and chopped
1 cup fresh baby spinach, washed, dried and chopped
1 cup prepared shredded hashbrowns
Salt and pepper to taste
Preheat oven to 350 degrees. Spray a 9 x 9 casserole dish lightly with buttered flavored spray. Whip eggs, cream, salt and pepper and put aside. Layer spinach, artichokes, hashbrowns, and Swiss cheese. Add 3/4 of the Parmesan cheese (reserve 1/4 cup). Pour egg mixture over the layers. Bake for 30 minutes, add the remaining Parmesan cheese on top and continue to bake another 30 minutes or until eggs are set and cooked through.
