Orange Banana Bread

I love oranges and bananas. So this is a love connection for me!

1 stick melted butter
1 cup sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup sour cream
2-3 medium size ripe bananas, mashed but still chunky
1 Tbs orange zest
1/2 cup fresh squeezed orange juice*

Preheat oven to 350 degrees. Grease a 9 x 5 loaf pan.

In a large bowl, combine butter and sugar, add eggs, vanilla, juice, zest and sour cream. Mix in dry ingredients. Fold in bananas. Pour into loaf pan and bake 50 – 60 minutes or until done. Cool in pan for 10 minutes, remove and continue to cool on wire rack. You do not have to glaze this but glaze recipe is listed below if you decide you want too.

1 cup powdered sugar
1/8 tsp orange extract
2 – 3 Tbs of milk

Mix together and pour over loaf. If glaze is too thick, very carefully add small increments of milk. You do not want this too runny.

*I always put citrus in the microwave for 10-15 seconds. It will give you much more juice if you are juicing oranges, lemons or limes.
