As you know by now, I love Mexican food. I think I could eat a taco everyday. I don’t, but I could! This recipe was inspired by the Dorito Tacos sold at Taco Bell. This is a quick and inexpensive recipe to make your family for dinner.
1 11 ounce bag Nacho Cheese Doritos
1 stick butter, melted
3/4 cup or refried beans
1 1/4 pound ground beef
I onion chopped
Salt and pepper to season meat
1 envelope taco seasoning *do not follow directions on the back
8 ounce bag of Mexican shreds
Toppings for tacos: lettuce, tomatoes, cheese, green onions, olives, salsa, avocados or guacamole, sour cream, whatever you like.
Preheat oven to 350 degrees. In a food processor, pulse Doritos into crumbs. It’s ok if you sneak a couple. Mix with melted butter. Form into a crust in a 9 inch deep dish pie pan. Bake for 8 minutes. Remove from oven and spread refried beans on the bottom of pie crust.
Brown meat with chopped onion. Season with salt and pepper, I used garlic salt. Drain grease. Add taco seasoning and 1/4 cup of water. You just want to moisten the meat with the seasoning. Let simmer 5-10 minutes until water is absorbed. Pour into pie pan. Top with cheese. Bake 20 minutes until hot and cheese is melted. Slice and top with your favorite taco toppings! Enjoy!
