Captain Nog Pound Cake


3 cups all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg (leave it out if you don’t like it)
2 sticks butter, softened
2 cups sugar
4 eggs
1 teaspoon of vanilla
1/2 cup Captain Morgan
1 cup of egg nog

In a medium size bowl, whisk together flour, soda, powder, salt and nutmeg. Set this aside.

Cream butter, after it’s smooth add sugar and blend well. Add in eggs and vanilla. Add rum to egg nog and stir.

Alternate flour and egg nog mixture, starting with flour and ending with flour. Mix until incorporated.

Divide into 2 greased and floured loaf pans (2) or use a bundt pan. Bake at 350 degrees for 40 – 45 minutes or until a cake tester comes out clean. Rest in pan (s) for 25 minutes.


2 cups confectioners sugar
3 tablespoons egg nog
2 tablespoons Captain Morgan

Blend until smooth. Pour over cooled cake (s). Glaze will firm up after a couple of hours.
